What you need:
* 1lb of ground beef
*2-4 large green peppers
* Small can of tomato sauce
*Rice-a-Roni 4 cheese rice
*Chopped onion (I use about a half of a medium size vadalia/sweet onion)
*Garlic salt
*pepper
*shredded cheese of your choice
*Preheat oven to 350 degrees.
1st step - Make the Four cheese Rice-a-Roni per the instructions
2nd - chop the onion. Place in frying pan with the ground beef and cook until all pink is gone.
3rd step - While the ground beef/onion mixture and rice is cooking, cut the tops off your green peppers, and take out the inside seeds so that they are hollowed out. Put them into a pot of water, and bring to a boil. Boil for about 2 minutes. When finished, take out of boiling water and place to the side.
5th step- place the the green peppers in a deep baking dish and fill the peppers up halfway. Add a small layer of shredded cheese. (at this point, I add extra spice to one of them for my husband. In our case, its African Bird pepper, but you could add whatever extra spices you want if someone in your family likes their food spicy!)
6th step - Fill up the peppers the rest of the way. Again, if you are making one spicy for someone in your household, sprinkle some of the spices on that same pepper. Make sure to remember which one is the spicy one!
7th step - Cover with tin foil and bake 20 minutes. Remove from oven, and take the tin foil off. Put another layer of cheese on top and bake for another 10 minutes.
Final step - Take out of the oven, and enjoy!
**Note - I say you need 2-4 green peppers, as you can really make this work for any of those numbers. The amount of mixture you are making, is for 4 peppers. So if you only make 2, you will have some left over mixture. I sometimes will make the leftovers in the next couple days for lunch or a dinner where my husband can't get out of work, either by just warming up the mixture and eating it by itself, or making another full pepper just for myself!
It may seem like a lot of work, but it really isn't, and I don't even need the recipe anymore!
