Crispy Baked Kale Chips - A Healthy Snack!

If you are married (or living with your significant other), there is a great chance that you have trouble finding healthy snacks for them. If you are being honest, you know they sneak into the cookies (you know, the full pack of oreos you just bought... you find there is already only one left), they eat your baking supplies (like Hersheys kisses, baking chips etc), and potato chips are their favorite snack. Talking to some of my cousins and friends, I realize that I am not alone in this. They have to hide the Oreos, hide the baking supplies and set aside the chips that are suppose to go with the burgers for this Friday night! Let's be honest with each other ladies... we all know this is common.

When we started trying to conceive, I was looking up recipes, snacks and such that I could try and sneak in so my husbands ehhhummmm "trying to conceive parts" would stay healthy. I read that the more folate the better. Ok, what has folate? I kept coming across kale. kale kale kale. So what is kale?


Let's just say, that when most people look at kale, they are thinking... what am I suppose to do with this? It is very dense, comes in green or purple leaves and does not form a head like lettuce. I had never worked with kale before, and was very nervous! I came across kale chips all over the internet. Kale. Chips. "Ok," I thought.... "this could work". So I made them for my husband, hoping that this would replace potato chips and some of the other snacks, at least a portion of the time. He LOVES them. I mean LOVES. He actually asked me if I could just have the baked kale chips around all the time. I thought, "IT'S A MIRACLE!". It took me several trials and errors to figure out how to get them perfect.

So here is what you do.

  • Grab your kale at the grocery store, in the produce section. Maybe start off with one bunch this time. 
  • Preheat oven to 350
  • Kale has a big stem in the middle of each leaf. Tear the leaves from the stem, and discard the stem.
  • Lay out on a cookie sheet, and spray with olive oil cooking spray. Don't spray too much, or your kale will end up being soggy. Just lightly coat. Its ok if you don't get every piece of every leaf. You just want to coat enough for your salt to stick.
  • Sprinkle with sea salt 
  • Bake for about 12 minutes. I keep a close eye on them, as sometimes it just takes longer, and sometimes, its too long. I can't explain why, it just does. When they start to get crisp, take the sheet out of the oven, and touch them to see if they are crisp. What I have found, is that more times than not, there are a few that haven't gotten crisp like the rest, so I will take off the ones that are done, and put the ones that didn't quite get there, back in for a few minutes.
  • I put in a large ziplock, but don't close it. When I have closed them in the past, they get soggy again.

Try it out. Like I said, my husband absolutely loves this. I have to do my part now, and keep them in this house as a healthy snack!

Brrrr! Baby it IS really cold outside! We had an eventful weekend. Well I should correct that and say that mother nature... she had an eventful weekend. We ended up getting what seemed to be 50inches of snow here. It started late Friday night, and kept going, and going and going, all the way through the middle of Sunday. It was a cold one, let me tell you, but supposedly, we will be getting close to 40 degrees later in the week! My husband will hate that! He wants snow at Christmas time (which I sort of understand).

Our Favorite Pins #3 - Christmas edition!


If you know me at all, you know that I am obsessed with vintage Christmas. I spend hours looking at it in the antique mall where we have our booth, and I spend a little of my money buying it too! Today, I will share some of the wonderful vintage Christmas pins I have found while feeding my Pinterest addiction lately. Yes, before bed, while at the doctors office, and while watching our favorite Christmas movies, I feed that addiction. But its worth it when you get to look at beauties like these! I hope you enjoy them as much as I do!

Wonderful Wednesdays #16

Its beginning to almost BE Christmas! I cannot believe its two weeks away. This shortened Christmas season is for the birds! Two weeks before Christmas, I am usually done Christmas shopping, we have had our Christmas lights out for weeks, and have sent our Christmas cards! Not this year. I still have a ton of shopping to do, we just finished our outdoor Christmas lights and I am now considering not doing Christmas cards! Time is just flying too fast.

We have done a little baking though. A few pumpkin rolls, and some buckeyes. I am doing another round of the awesome Santa Hat Party mix this year, as that was a huge hit, and I hope to replace last years pics of it with some new better ones. We also made a killer Candy Cane cocktail, which got everyone in the festive mood!

We had a smaller turnout than normal for the linky party last week. May have something to do with the party going up late due to my husband needing the computer constantly lately, so I am putting up two features this week instead of the normal three.

The Ultimate Candy Cane Cocktail


This is not for the faint at heart.... This is a drink that can knock your socks off, and really get you in the festive mood! You will have to excuse my pictures.... making this drink was an off the cuff decision the night before Thanksgiving, so I pulled out my camera phone and shot us in action! 

Here is what you need:

  • Half & Half
  • Whipped Cream Vodka
  • Peppermint Schnapps
  • Mini candy canes (or big candy canes broken up)

This is simple - grab a pretty glass pitcher (because your guests will definitely want some!), and some pretty festive martini glasses. 
You will want to do equal parts of Half & Half, Whipped Cream Vodka and Peppermint Schnapps depending on how many people are joining in (again, you have to know that even if they say they don't want some, they will once they see you sipping on it!). If this makes you nervous, send me a message and I will guide you through it, but start with a cup of each and stir. Then you can decide if you want to make more!
WARNING: this drink is STRONG. I mean STRONG. I am not a big drinker, I enjoy a drink every once in a while, but if I have ONE of these, I am giggling. If I have two of these, it's possible I will spray mashed potatoes all over the kitchen when I am getting them ready for dinner :)




Adorn them with a candy cane and you are ready to go! Always drink responsibly. Make sure to have your designated driver, and enjoy ONE, or maybe two of these yummy cocktails!

Officially - HAPPY THANKSGIVING!  I went back and forth on whether or not to skip this weeks party as I know we are all very busy, but I figured that I would go ahead with it, and hope that you are around enough to hang out for a few and join!

I am lucky I am even getting this post out. I am in my final countdown to Thanksgiving and the big black Friday sale at the Antique Mall. I am working extra hours right now to help the mall out by preparing our booth signs for all 200+ booths at the mall, had two doctors appointments today, did a small amount of Christmas shopping in between, and am about to start packing to go to my parents, and cleaning up around the house to get ready to bring the Christmas decor up from the basement! Whew! I need a nap just from thinking about that all - but I am excited at the same time!

Our Favorite Pinterest Things Friday #2

Yes, you read that title right. And no, you are not going insane. It is Monday. I don't know what to tell you! Things just seem to get away from me during the holiday season.  We have been getting ready for the big sale at the antique mall, trying to finish up on a couple projects around the house, running around like crazy trying to get the outdoor furniture, garden stuff etc into the garage because it actually snowed here already (a few times!), as well as getting ready for the holidays!

This week, I am featuring recipes that I have found on Pinterest that I just LOVE. I would love for you to follow Wonderful at Home on Pinterest, but if you would like, please also feel free to follow my personal Pinterest account, where I have a specific board called "Recipes I Love!". Any time I try a recipe and LOVE it, I move it over to that board! So if you are looking for something to make for dinner, dessert, a party etc, you can go there and find one that has been tested and approved, and has the husband thumbs up!

Copycat Alice Springs Chicken - I have made this twice in two months. We love it! And it is low carb which is something I have to watch due to my PCOS.


Peanut Butter Cheese Ball - YUM! She hit a home run here. My family LOVED this. I keep getting requests for it! 


Easy BBQ Ribs. The first word says it all. It was easy, and amazing. It was my first experience making ribs, and she gave such good directions!

Wonderful Wednesdays #13 with features

Wow how this month has flown by hasn't it? We are 9 days away from Thanksgiving! I can't wait. My husband and I go and spend the night at my parents, which is only about 8 miles away, but we play cards, wake up to the AMAZING smell of giblets cooking on the stove, eat my Fathers FAMOUS biscuits and gravy and watch the Thanksgiving parade before gobbling down loads of food! 

Everyone has traditions, and everyone loves their food, but I have to say, ours is THE BEST. My parents are phenomenal cooks. I mean AMAZING. Sometimes to a fault - ha! We like our dishes the way we like them. Don't anyone dare bring some concocted version of sweet potato casserole (my aunt makes the best, so she makes it), don't anyone dare bring a bizarre rendering of green bean casserole (I usually contribute that) and by all means, we better have giblet stuffing (and my parents take care of that since it is a must, and not everyone that comes to dinner thinks giblets are an appropriate food.

We have about 13 1/2 people (the 1/2 is the one great kid we have in our family), so we cook two large turkeys. One oven baked and one fried. The fried one disappears FAST. It is smaller than the baked, but we enjoy having both around.

A Christmas treat that's easy as 1 - 2 - 3! Good for the kiddos too!






Let's admit it folks... the holidays are upon us. Over the past few years, I have to admit that I have sort of meshed Thanksgiving and Christmas all into one. I can't help it! I LOVE the holidays! It is the last glimmer of happy, smiles and love before us Michiganders get snowed in and people start to get.... ANGRY. Ok... Ok, maybe that is going a little far, but seriously, things get a bit tough around here, so I enjoy the holidays to the fullest, and that includes cooking and baking my little heart out! Now maybe this wouldn't even fall into the baking category for most people, but you know what.... the oven was on, I had the fireplace going, a Christmas(y) movie on and pushed out a tray of these in minutes!

It is a great treat to make for your neighbors, to add to a cookie tray, or to send with your kid to school. YES! They can help too because literally, it is one of the simplest treats you can make for the holidays.

Here is what you need:

Preheat oven to 350
*Pretzels
*Rolos
*M&M's (regular, dark, peanut, peanut butter, peppermint - or any flavor that you would like!)
*Baking sheet

Place the pretzels on the baking sheet. Unwrap Rolos and place one Rolo on each pretzel. Bake at 350 for around 5 minutes. You want them soft, but not melted everywhere!
Take them out and place a M&M in the middle of each by gently - and I mean gently - pressing down. You want to try not to break the caramel out, or else they will stick to the baking sheet. Then let cool! You have got yourself a simple, yummy and easy treat to make for the holidays!

A note - make sure to get your Rolos early, the stores have a habit of running out during the holidays!

Wonderful Wednesdays #12 with Features!

Its finally winter...eeeeekkkk WHAT?! I mean fall right? Well here in Michigan, it has snowed, and that snow has stuck. OUCH. It was something I was not yet prepared for. I actually hoped that we would still have the bright fall colors hanging around during Thanksgiving. (Nice dream huh?). So... we deal with it. This Sunday is suppose to be back up to 54 degrees... a much better number than the cool crisp 34 degrees we are at now (in the warmest part of the day).

Things are picking up at the Antique Outlet, which I am happy to see! I am excited to watch our sales grow this season as it will be the first Thanksgiving/Christmas with two booths. We have already decorated for Christmas at the booth. And I can officially say from the look of our sales, that people were glad! I have sold more vintage Christmas items than I would have thought, so I won't hesitate to decorate next year as early as I did. As you know, I am a huge fan of Vintage Christmas, so it is hard to see a lot of it go out the door, because yes, I am one of those who wishes they could keep everything! 

I have also escalated my Pinterest addiction. Yes, it's in full force now. So, I figured I would put it to good use, and on Fridays, I will share some of my favorite things that I find while browsing!

Our Favorite Pinterest Things Friday #1

What better than a new blog series? And what better than showing off my favorite things from Pinterest? Well, frankly dear, I can't think of anything! Lately, my Pinterest addiction has skyrocketed. I don't know why, and I really don't care - because I am enjoying this addiction!

I get so excited about the things I find. Each time I find something that catches my eye, I think: Oh! The possibilities! More times than I wish to admit though, it stays... just a possibility. I wish I had more gusto. I wish I had a never ending flow of energy, but for many reasons (some my fault, some not), I just don't.

I also love promoting other bloggers and blogs so I will try to choose from the blogger community as much as possible! I think that this is such a great community, and there is nothing better than supporting each other in the adventure. Wonderful Wednesdays #11 with features!

Welcome to Wonderful Wednesdays #11! We are going live with this party a little later than we usually do every week... not by much, but still - late. You see last night, I was dead beat tired. I came home from work (where at the Antique Mall, I walk and stand on the hardest concrete floor known to man for 8 hours), had a few minutes to sit on the couch before my husband came home and had to make dinner, then literally laid down and stared at the TV. I mean it. I didn't blog or play on Pinterest, which is HUGE. I usually stay up for a couple hours after my husband goes to bed so I can catch some of my shows, work on my blog and just decompress - and when he fell asleep, I turned off the TV and was OUT! That means I was EXHAUSTED! Then today, I got up at 7am (that's pretty early for me) and drove 2 hours to a little antiquing town to do some treasure hunting! I am pretty happy with the treasures I found, but as I walked in the door at 7pm tonight, I realized, I am beat!

Christmas at the Antique Booth!

The holidays are upon us. For a lot of people, its a little early. But for retailers, its really not. The two antique booths that my husband and I have with my parents have already been adorned with the holiday season. As I have shared before, I am full fledged into vintage Christmas. I was a little concerned that we were jumping the gun a little, but the customers have spoke (with their purchases!), and I think we made the right decision... it was time. With vintage stuff... Customers are usually collectors, or people who have a vision in mind, so they want first pick at whats out there. Here is what we have been doing with our Primitive style booth!

Isn't this vintage Christmas poster adorable, especially with the "Santa Stops Here" sign underneath? I placed them in the window of the vintage door we have placed at the edge of our booth.... so welcoming I think!
                                                


I wish the pictures did the booth justice, although seeing them makes me think that I need to add some above lighting. I'll just add that to the list right?! Did you spot that gigantic bottle brush tree at the bottom of the photo? I LOVE THAT!



The corner shelving unit you can see below - well we got that off the side of the road. Nothing better than something free AND functional! It holds my new line perfectly. Yes, the new line isn't vintage, but vintage style country, which I love decorating with!

 Can you pick out the fancy window I found on The Great Junk Hunt?! It has already sold! I thought it was well priced and I guess the customer thought so as well!

We added a little Christmas tree I picked up at the mall last year to display our Christmas ornaments for sale!

Wonderful Wednesdays #9 with features!

Hello all,
Boy have we really gotten into fall around here. What I mean by that, is that Mother Nature has finally caught the hints everyone was giving her by wearing their boots, carving their pumpkins, and drinking their cider (with warm cinnamon doughnuts of course!). The weather has changed around here that is for sure. We even turned on the heat a tad bit, and have been getting good use out of our gas fireplace!
